Different teas are brewed at different temperatures. But how can one determine the water temperature without a thermometer?
The ancient Chinese had a solution: they observed the bubbles forming in the pot. By watching the size and quantity of the bubbles, they could estimate the temperature of the water. Each stage was given an amusing name:
- Shrimp eye – small, fine bubbles
- Crab eye – slightly larger bubbles
- Fish eye – large bubbles
- String of pearls – a large number of rising bubbles
- Raging torrent – fully boiling water
Mixing and matching with my other prints is possible.
